Who should I start at WR--WEEK 11 Fantasy Football?

I like Jackson, personally. The Chargers do have a tough defensive matchup this week, but having Rivers throwing the ball doesn't hurt. Chambers being back hasn't hurt Jackson's productivity, and you're absolutely right about Jackson seeing more one-on-one coverage. He has emerged into one of Rivers' favorite targets, and will definately see his share of thrown his way. Whether or not he takes one to the house...we'll just have to see. Also, there is always the good possibility that the Chargers will be playing from behind late in the game...which gives Jackson potential for some more receptions/yards and maybe a big play or two.
